I'm trying to bring the healthy back into breakfast at our house, so
I decided to experiment with whole wheat flour and bananas...and at the
last minute, I threw in some chocolate chips. So Yummy! Who knew this
{for the most part} healthy recipe would be so good?!
Try it for yourself...
1 cup mashed very ripe bananas (about 2 medium-sized bananas)
- 1/2 cup packed brown sugar
- 1/3 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 1/2 cups whole wheat flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup miniature milk chocolate chips
- 2 tablespoons granulated sugar
- Mix together the bananas, brown sugar, milk, vegetable oil, and egg. Add flour, baking powder and salt. Fold in the chocolate chips {eat a few...give your kids a handful}. Spoon batter into greased muffin pan or use paper liners. Sprinkle the tops with the granulated sugar. Bake at 350 degrees for 12 to 16 minutes. {Makes 12 or so.}

Those look and sound delicious! I need to start bringing healthy back...or should I just say "bringing healthy?"...to breakfast, too!
